Ingredients for:
Potato Churros

  • 500 g potatoes
  • 2 egg yolks
  • 60 g corn flour
  • 15 g cheese powder
  • 1 tsp salt
  • Black pepper
  • Olive oil

To prepare these churros, first cook the potatoes in boiling water for 20 minutes until they are tender. Then drain and peel them.

Next, in a bowl, mash the potatoes with a fork or a potato masher and then add the egg yolks, corn flour, cheese powder, salt and black pepper to them and mix until all the ingredients are completely combined. Then cover the bowl with plastic wrap and place it in the freezer for 10 minutes.

After 10 minutes, transfer the mashed potato mixture to a piping bag fitted with a large open star tip. Then in a saucepan over high-heat, add enough olive oil and carefully pipe churros into long ropes and use a knife or scissors to cut off churros from piping bag. Deep fry churros until they are golden brown and crisp, it will take about 2-3 minutes. Then drain fried churros on a paper towel-lined plate. After that, serve the potato churros with hot tomato sauce.

Note: You can use Romano Parmesan blended cheese powder or white cheddar cheese powder as well.
