Ingredients for:
Carrot Cream Soup

  • 3 carrots
  • 1 potato
  • 1 onion
  • 6 tbsp olive oil
  • Salt & pepper
  • 1 garlic clove
  • 1 tsp oregano
  • 2 slices of bread


To make carrot cream soup, first peel and then cut the carrots, potato and onion in big pieces.

Then in a pot over high heat, start to fry the onion with 5 tablespoons of olive oil first. After 5 minutes add the potato to the pot and fry it for 5 minutes as well. At the end add the carrots to the onion and potato and fry them for 5 minutes again. Now it is time to add the salt and pepper with 1 glass of water to all the ingredients.

As soon as the soup starts to boil, lower the heat to medium and let simmer for 30 minutes.

Meanwhile chop the 2 slices of bread into small pieces. Then in a little saucepan fry the chopped bread, oregano and garlic clove with 1 tablespoon of olive oil to make the breads crispy.

After 30 minutes, blend the soup with an electric hand blender. Then serve the carrot cream soup in small bowls with crispy breads on top of them and then serve them.
