  • 2 leeks
  • 2 potatoes
  • 150 g green peas
  • 5 tbsp olive oil
  • 2 garlic cloves
  • 1/2 liter water
  • Salt & pepper


Leek Cream Soup recipe

To prepare this leek cream soup, first wash and then rinse the leeks to remove soil from them. After that, slice them. Next, peel and roughly chop the potatoes and garlic cloves.

Then in a large pot over medium-high heat, add the olive oil and leeks. Stir for about 3 minutes until the leeks are soft. Then add the chopped potatoes and garlic. Mix well and fry all the ingredients for 3 minutes more. Now add the salt, pepper and water to the pot and put the lid on. When the soup starts to boil lower the heat and simmer for 30 minutes.

Meanwhile, in another pot cook the green peas in boiling water for 10 minutes and then drain them.

After 30 minutes, remove the soup from the heat and blend it with an electric hand blender until smooth. Then add the green peas to the soup and mix well. After that, your leek cream soup is ready to serve.
