  • 100 g pipe rigate pasta
  • 50 g parsley
  • 2 carrots
  • 1 onion
  • 2 celery stalks
  • 4 tbsp olive oil
  • Salt & pepper


Pipe Rigate Soup recipe

To prepare this soup, first peel and then chop the onion finely and mince the parsley. After that, peel the carrots and slice them. Also, slice the celery stalks.

Then place a pot over high-heat, warm the olive oil in it and then add the chopped onion. When the onion is translucent, add the carrots, celery, salt and pepper and sauté for about 3 minutes until the carrots and celery stalks are soft.

Now add 2 liters of water to the ingredients in the pot and when the soup starts to boil, lower the heat to medium, put the lid on the pot and let simmer for 20 minutes. After 20 minutes, add the pasta and minced parsley to the soup and let simmer for just 10 minutes more. Then your soup is ready to serve.

Note: Instead of pipe rigate, you can use any other pasta in your soup like elbow macaroni, orzo, penne, rotini or even tortellini.
