  • 500 g pumpkin
  • 300 g potatoes
  • 3 carrots
  • 1 onion
  • 4 tbsp olive oil
  • 1/2 tsp ground nutmeg
  • 1/4 tsp red chilli powder
  • Salt


Pumpkin Cream Soup recipe

To prepare this cream soup, first peel and then cut into thick slices the pumpkin. Then peel and chop the onion, potatoes and carrots.

Next, in a pot over high-heat, warm the olive oil first and then add the chopped onion. When the onion is translucent and slightly golden, add the carrots. When the carrots are soft, add the potatoes and sauté for 3 minutes. Then add the pumpkin, salt and chilli powder and after 3 minutes add the water just to cover the ingredients and put the lid on the pot. As soon as the cream soup starts to boil, lower the heat to medium-low and let simmer for 25 minutes.

After 25 minutes, remove the pot from heat, add the nutmeg and blend the soup with an electric hand blender. Then your pumpkin soup is ready to serve.

Note: When preparing soups, always sauté vegetables before adding the liquid to the pot, because this way your soup will be more flavorful.
