Ingredients for:
Spelt Soup

  • 100 g spelt
  • 150 g spinach
  • 1 carrot
  • 1 celery stalk
  • 4 tbsp olive oil
  • 1 onion
  • 1 garlic clove
  • Red chili pepper powder
  • 1 tsp turmeric
  • salt

Instructions

To make this spelt soup, first chop the onion finely. Then peel and slice the carrot. After that, chop the celery stalk and aslo the garlic clove.

Now in a pot over high heat, add the olive oil and onion and start to fry the onion. When the onion is translucent, add the spelt, chopped carrot, celery and garlic to it and fry them for 5 minutes. Then add the red chili pepper powder, turmeric and salt to the rest of the ingredients and continue frying for 2 minutes more. Now it is time to add 4 cups of water to the pot and then cover it. When the soup starts to boil, lower the heat to medium-low and simmer it for 30 minutes. Finally, just 5 minutes before the spelt soup is ready, add the spinach to it and then serve the soup.

Spelt:

is an ancient whole grain grown in many parts of the world. It contains small amounts of calcium, selenium and vitamins B1, B6 and E. It is also high in carbohydrates and is very similar to wheat.
