Vegetable soup (Ash)

  • 50 g white beans
  • 75 g dill
  • 50 g lentils
  • 75 g parsley
  • 75 g spinach
  • 50 g chickpeas
  • 75 g cilantro
  • 100 g soup noodles
  • 1 onion
  • salt
  • 1 tbsp turmeric
  • 1 tsp black pepper
  • 2 cloves of garlic
  • 4 tbsp olive oil


To prepare this vegetable soup (Ash), first soak the chickpeas, white beans, and lentils for 12 hours. Then cook them in abundant boiling water over high heat for 30 minutes. Then when they are cooked, drain them in a colander. Now chop the onion finely. After that, in a pot add the olive oil and fry the onion. Then chop the parsley, dill, spinach, and cilantro finely and when the onion is translucent, add the chopped vegetables to it and continue frying for 5 minutes. Now chop the garlic and add it to the rest of the ingredients. At this point, also add the salt, turmeric and black pepper to the ingredients and continue frying for 5 more minutes.

Finally add 5 cups of water and also the chickpeas, lentils and white beans to the pot, and simmer the soup for 30 minutes over medium heat. And just 5 minutes before the soup is ready, add the noodles to it and then serve it.

Note: You can serve this vegetarian soup (Ash) with bread.
